Get your healthy eating goals on track with easy meal preps and nutritious food. These mason jar salads are easy to prep, and they won't let your toppings get soggy!

Salads are SO much more than lettuce and dressing - pack it full of vitamin dense veggies and protein packed nuts, seeds, lentils and rice!

For this salad, I used Floating Leaf Prairie Blend Rice - it has 8 grams of protein per 1/4 cup! And that's not including the seeds and the peanut butter sauce I used.

Then simply add your favourites, juciest on the bottom, lightest on top:
Hummus
Rice blend
carrots, cukes, broccoli, celery, etc
lettuce
spinach & arugula
seed mixture with cranberries

Store it in the fridge and you have a healthy meal at your finger tips.

You can use whatever dressing you have on hand, or you can make one. I made my favourite peanut butter sauce (natural PB, rice wine vinegar, lime juice, ginger, garlic, tamari, and a sploosh of maple syrup)
